Lately, I have been noticing on all my social Medias, friends expressing the want to go vegan. And I would be foolish not to think that the new health documentary 'What the Health' has something to do with it. .. oh, and if you haven't seen it, check it out... it’s one of those documentaries that will make you want to eat grass for the rest of your life... haha, joking... but you will seriously question a lot of the food choices you've made over the years, and possibly seek out a new healthier diet.

Now I'm sure you are wondering "is LaTrā Vegan again", and the answer is no. I will admit that my family and I have decided to change our diet to be more plate based (about 85% if you want to be technical) with consuming meat on the weekends; our meat of choice being goat meat, lamb, and seafood. Why these three you ask? Well, recently I saw a video of the meat industry (primarily beef and chicken) where they were cutting, and (in my eyes) popping tumor pimples... Yes, I said tumor pimples! It looked like someone was popping puss filled pimples out of the meat, thus turning my stomach in ways I never thought possible. I am a very visual person, so to see that really made me feel some kind of way about beef and chicken... and if you're wondering "what about pork", well my family and I really don't eat pork. We may dabble with some bacon on the weekends, but that's it. I personally get sick if I eat too much pork, so I tend to steer away from it.

Anyway, long story short, I will never look at beef and chicken the same... at least for now. And seeing those images just reminded me of our vegan days, and although I don't want to go back to being 100% vegan... honestly, I am emotionally tied to seafood and was slightly depressed when I gave it up the 1st time... I do want to continue to explore and create more vegan-friendly recipes for those in transition and in need of some new ideas... I'm all for thinking out of the box, and that is one thing I can say that I love about vegan-friendly recipes that are geared towards those who are transitioning; you really have to think out of the box to mimic what you once enjoyed while being a meat-eater.

So with all that being said, here is my Cashew Cream Veggie Pasta... Oh, and another thing... I'm also no longer using such terms like "Vegan Alfredo Pasta" because for someone who is transitioning, they are going to expect the flavors to be the same as if they used dairy or meat; which could lead to comparison and disappointment. Let's be honest, you can never really mimic the exact same flavor and texture of meat and dairy from home, but you can make some pretty flavorful, savory, mouthwatering dishes without it.

This is actually one of my favorite pasta's to make. I love creamy pasta, whether made with cheese or cashews, I love them all and this one really hits the spot. Its slightly nutty, super creamy, and has a cheesy flavor that is different and delicious. And just because it’s vegan, doesn't mean that you won't suffer from a little food coma. Ha!
